Our Meat

We offer split quarters of natural beef.  A split quarter is half of the hind quarter and half of the front quarter.  Two split quarters is a whole side of beef and 4 split quarters is a whole beef.  A split quarter gives you some of each beef cut depending on how you choose to have it processed.  Because our animals are fed only alfalfa, clover and grass, the meat is lean.  Our lab-tested ground beef tested at 91.2% lean.  Because it’s leaner than you might be used to, keep a close eye if you’re grilling steaks – they will cook faster at a lower temperature because there’s less fat!

The animals are processed when they weigh 900 to 1200 pounds and are 18 to 24 months old.  (animals that are not fed grain take longer to finish on pasture &  hay)  we have them available year round.  After processing, the meat “hangs” for about 2 weeks to tenderize & age.  Then it gets cut, wrapped and frozen and is ready for pick-up in about a week..

Our meat is priced per pound based on the hanging weight.  Therefore, you pay for meat, not hide and other discarded items.  If we have your order for a quarter(s) before processing, your meat can be custom cut if you call the processor directly and give the butcher your specific cuts. Example of cost:
For an example of cost, let's take a steer we recently had processed.  A split quarter had a hanging weight of  155 lbs.
We currently charge $2.90/lb hanging weight.  So, the cost of that quarter was $499.50.  The processing fee was $77.69,  and the final cost of the meat was $527.19.  From that hanging weight, you'll get approximately 112 lbs of wrapped meat depending on how you choose to have it cut (steaks, roasts, hamburger, stew meat, liver, soup bones, tongue, sausage, patties,  etc).  So, the final cost of the wrapped meat was $4.71/lb.     Don't forget - it's all natural beef, no bad stuff!!

If you wondering how much freezer space you’ll need, we have a 15 cubic foot chest freezer that holds 4 quarters or a whole beef.
